Don't Throw Out Your Pumpkin Seeds

Let the festivities begin!  Halloween kicks off the start of the holiday season.  From now until the end of the year it's party, party, party.  You're probably carving pumpkins this week in anticipation for a spooky and fun October 31.  I know I am.  But don't throw away those seeds!  They have amazing health benefits.  Here is a list of my favorite five:

  • Pumpkin seeds, or nan gua zi, as we call them in Chinese herbology, are loaded with zinc, a beauty mineral.  So they will give you glowing skin.
  • They are a fantastic vegetarian protein and omega-3 fatty acid source.
  • Also used to expel parasites, pumpkin seeds can be eaten after sushi as a preventative measure.
  • Postpartum swollen hands and feet?  No problem.  Pumpkins seeds are great for alleviating water retention.
  • And for gentlemen, pumpkin seeds will deliver zinc to the prostate, may diminish prostate swelling, and increase sperm count.

A serving of pumpkin seeds is 30 - 60 grams, or a small handful.  Pumpkin seeds should be eaten raw.  They can be eaten daily with no side effects.  Good quality are green in color and will turn brown when rancid.  They will stay fresh for up to two months in the refrigerator and should be stored in an air-tight container.
